Total time: 1 hr 15 mins; prep 15 mins, cooking 1 hr.
Ingredients
- 2 cups flour
- 3/4 cup white sugar
- 1 tbsp baking powder
- 3/4 tsp salt
- 1/2 cup coconut (optional)
- 3/4 tsp ginger, minced
- 7/8 cup milk OR yoghurt
- 2 eggs
- 1/2 cup olive oil
- 1 tsp vanilla essence
- zest of 1 lemon (approx 1 tbsp)
- juice of 1 lemon (approx 3 tbsp)
- 1 1/2 cups strawberries (optional)
Method
- Combine flour, sugar, baking powder (don’t forget this), salt and coconut, if using.
- Add in all other ingredients (besides strawberries if using) and mix.
- Fold in strawberries (if using).
- Pour into lined baking tin (I like square ones for ease of serving)
- Cook for 50-60 mins at 180 degrees C until a skewer inserted comes out clean.
- Allow to cool before serving.
